the best vegan chocolate chip cookies

When the cold months arrive, all I can think about is a hot tea, a good movie/book and cookies! If you are vegan or lactose intolerant, you know how difficult it is to find cookies with no eggs, no milk, no honey.. so why not make your own? I know, I know, all the effort and time and mess in the kitchen! Now trust me, these are the best chocolate chip cookies ever and super easy to make! You will drool with the smell coming from the oven.
ingredients - around 16 cookies
1/2 cup coconut oil (solid)
1/4 cup coconut milk
2 cups all-purpose flour
1 cup brown sugar
2 cups chocolate chips
1 spoon agave
1 tsp baking soda
1/2 tsp salt
2 tsp vanilla extract
how to make
Preheat the oven to 200°C
In a large bowl mix the coconut oil, brown sugar, coconut milk, agave and vanilla extract. In a separate bowl, combine the flour, baking soda and salt. Mix well to combine.
Add the dry ingredients into the wet mixture and use a wood spoon to mix everything.
Add the chocolate chips and whisk well to combine. The batter will be very tick!
Scoop three tablespoon sized mounds of dough onto the prepared tray, leaving some space between each cookies for spreading.
Bake for 10 minutes, or until the edges are golden and the centers have set.
Cool cookies on the baking sheet for 15 minutes before transferring them to a cooling rack.
I know the hardest part is going to be waiting for the cookies to cool down, but it's worth it! Boil an herbal tea, choose a good movie and enjoy these mouthwatering cookies in good company (do not eat them all alone)!
