There are recipes that make us miss home, and for me, one of them is the stuffed bread that we used to have at all parties. Of course it had bacon, cream, cheese and all other things that I don't eat anymore and that's one of the reasons I decided to reinvent the recipe, creating my own version of a vegan stuffed bread!
I know that baking can be a nightmare for some people, so if you are one of those, you can buy the bread. But if you like all the creativity that the kitchen can offer you, just like me, make your own! There is nothing better than homemade bread!

Plain flour 1 + 1/2 mug
Baking powder 2 teaspoon
Water 1 mug
Salt 1 teaspoon
Fresh Basil 6 leaves, minced
Oregano 1 tablespoon

Pile the flour on to a clean surface and make a large well in the centre. Pour the water into the well, then add all other ingredients.
Use your hands to mix everything until you have a silky and elastic dough (you can add some flour to your hands to make it easier).
Put it in a bowl, cover it and and allow it to prove for about one hour – ideally in a warm place.
After one hour, shape your bread in a beautiful ball, make sure there are no holes.
Preheat the oven to 250°C. Place the bread on a baking tray and into the preheated oven for 5min.
After 5min, lower the temperature to 200°C and let it cook for 40min.
When the bread is ready, remove from the oven and let it cool.
Cut the top with a knife and remove the bread inside, being careful not to break it.

Spinach 40g
Black olives 20/25
Vegan parmesan cheese 30g
Soya cream 250ml
Black pepper 1 teaspoon
Garlic powder 1 teaspoon
Salt 1 teaspoon

Chop the spinach and the olives and cut the cheese into small cubes.
Mix everything in a bowl, add the soya cream and season it with black pepper, garlic and salt.
Add the mixture to the bread and take it to the oven for more 20min (180°C).

Toast the pieces of bread that you removed from the interior and spread the filling on it, enjoy the flavours of herbs.. delicious, right?
