Marinated Mushrooms Skewers With Delicious Fresh Salad
The temperatures are getting warmer, it's time to go outside and have a picnic while enjoying the sunshine! Warm afternoons ask for light foods and fresh flavours and as easy as possible, as nobody wants to spend hours in the kitchen with the summer coming.
For me, one of the best foods we can have on a picnic are skewers: easy to make, easy to eat and easy to love! So today I bring you a recipe to share with friends and family while enjoying the sunny days and having a cold drink. The best about this recipe is that it is very healthy, easy and funny to make, so you can even have your children helping you! Then relax under the sun and enjoy your lunch with all the fresh flavours.
400g baby Mushrooms
2 minced Garlic cloves
1 tablespoon Soya sauce
1 tablespoon Balsamic vinegar
1 teaspoon Salt
1 teaspoon Black pepper
10 Bamboo/wood skewers
Place the marinade ingredients in a bowl: garlic, black pepper, soya sauce, thyme, balsamic vinegar, salt. Mix everything well.
Wash the mushrooms and cut it in half.
Place the mushrooms in the marinade bowl and mix everything well. Leave it for 15min.
After the 15m, heat a frying pan over high heat and place the mushrooms with all the marinade liquid in the pan. Let it cook for 3min and, turn the heat off and let them cool down.
Skewer the mushrooms into the bamboo/wooden skewers. It’s easiest to skewer them by twisting them into the stick. Do it carefully to make sure you don't crack the mushrooms.
3 medium Tomatoes
1 teaspoon Olive oil
1 teaspoon Vinegar
1 teaspoon Salt
1 teaspoon Thyme
Chop all the vegetables into a bowl: onion, tomatoes, avocado, cucumber.
Season it with olive oil, vinegar, salt and thyme. Mix it well.
Take everyone outside and celebrate the sun with this delicious healthy lunch!
