Soya Bolognese With Garlic-Herb Roasted Potatoes

Another day to jump to the kitchen and make something delicious! This time, a delicious soya bolognese, not only for vegans but also for those who don't believe that soya can taste as good as meat, or even better! This recipe only takes 45 minutes to be ready, serves three people and if you want more just double the quantities. It has no secrets and is as easy as delicious.
My favorite part? The smell of herbs, garlic and olive oil from the potatoes while in the oven .. impossible to resist! Let's try it?

Soya bolognese
75g soya
200g italian passata
20 baby tomatoes
4 shallots
2 garlic cloves
olive oil
black pepper

Place the soya in a recipient, boil water and put it on the soya. Leave it for 5 min.
Chop the shallots and garlic. Heat a pan over medium heat, place 2 tablespoons of olive oil, the shallots and garlic.
Chop the baby tomatoes (don't forget to wash it) and add to the pan. Season with salt, black pepper and oregano.  Let cook for 3 min.
Drain the water from the soya and season it with salt, nutmeg and black pepper. Add the soya to the pan, mix everything well and add the italian passata, mix again.
Reduce the heat to the minimum and let cook for 15 min.

Garlic-Herb roasted potatoes
6 medium potatoes
4 garlic cloves
black pepper

Pre-heat the oven to 200°C degrees.
Wash and cut the potatoes into large sticks. Crush the garlic and place on a tray with the potatoes.
Season with salt, black pepper, paprika, thyme and marjoram. Water with olive oil until the potatoes are well covered.
Place the tray in the oven and reduce the temperature to 180°C. Let cook until the potatoes look golden and crisp (aprox. 30 min).

Remove from the oven, serve with the soya and enjoy the rustic warm flavours!
